For my birthday, my mom asked me what I wanted to do for dinner. I didn't want to go out to eat as we usually did, but rather to have a home-cooked meal! My mom was ready for whatever I asked and even if she never made it before, she was willing to take a chance! By my request, she made me almond crusted tilapia, green beans almendine, and couscous! As for dessert, I found these banana split bites on Pinterest that looked delicious, so my mom made those for me for dessert!!
Tilapia with Green Beans Almendine and Whole Wheat Couscous
She crushed whole salted almonds very fine and tossed with an equal amount of breadcrumbs. First she lightly coated the fillets with Dijon mustard and then breaded the fillets, heated up some olive oil in a pan, and seared them on both sides for a nice brown crust.
The green beans she steamed in the microwave to cook, melted a little butter on the them when they were cooked and tossed with parmesan cheese. She sliced some almonds(same kind from the fish) and tossed with the green beans.
For the whole wheat cous cous, she cooked it according to the directions. She lightly sauteed the onions and bell peppers and added them to the couscous with a splash of olive oil for a smooth consistency. Seasonings added include dried red onions, chili powder, garlic powder, and garlic salt.
Banana Sundae Bites

Cut bananas into 3" pieces. The tops were then hallowed out so ice cream can fill them in. (turns out our bananas were skinny so it was difficult to hallow them out).
Dip the ends of the bananas in regular or white chocolate bark (your preference). As soon as they are dipped, roll them in sprinkles or cookie crumbs if preferred.
Let those cool in fridge or freezer.
Once set, fill the bananas with ice cream of your choice (my mom used turtle tracks) and place in freezer until ready to serve.
Right before serving, squirt Reddi Whip on top and top it off with a maraschino cherry!
