So after 9, 6-hour days in class, my first Culinary class is over! Looking back it actually went pretty fast. Even though we are in the kitchen slaving over a stove for six hours, it goes by rather quickly. I learned a lot about braising and stewing and certain techniques on how to make sauces and stuff. With all that knowledge we accumulated, we took our written exam and then our practical, which each of us individually prepares our own dish. Our dish includes a random meat that the Chef gives us, either a braising or stewing meat, and then we pick our own starch and vegetable to go with the dish. The only thing is that we had to use both braising and stewing methods to complete our whole dish.

I was pretty happy with it! My Chef thought is was very nicely presented and thought the textures of the food were good because he didn’t mark me off on that! I’m relieved it’s over but I enjoyed this class because I learned a lot in the first 2 weeks of college! I can’t wait to see what Stocks, Sauces and Soups has in store for me! It starts tomorrow (September 20) and goes for 9 days just as this class went! Talk with you about that class soon. Good Eats
